4.1 Training
4.1.1 It is a legal requirement that food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities.
4.2 Hazard Analysis
4.2.1 As the proprietor of a food business you must:
4.2.1.1 Identify any food safety hazards associated with the activities that you undertake.
4.2.1.2 Know which steps in those activities are critical for food safety.
4.2.1.3 Ensure safe controls are in place, maintained and reviewed regularly to reduce any risk arising out of those activities.
